Strawberry custard tarts. A great way to create individual dessert servings for a wedding reception.
Strawberry custard tarts
12 frozen mini sweet tart shells
2 egg yolks
2 tbs caster sugar
1/3 cup (80ml) thickened cream
1 1/2 tbs strawberry jam
6 small strawberries, hulled, halved.
Icing sugar, to dust
Preheat the oven to 160°C. Place the frozen tart shells on an oven tray and bake for 10 minutes. After they have baked, set the aside to cool.
In the meantime blend egg yolks and sugar with a whisk until the sugar dissolves. Stir in the cream.
Place 1/2 teaspoon of strawberry jam into the bottom of the tart shells, then place a strawberry half into the middle of the jam, flat side down. Then pour egg mixture evenly around the strawberry.
Bake for 10-12 minutes until the custard is set. Dust the tops of the
